Ingredients
1/4 c olive oil .
1 c new potatoes, cut into strips .
1 c sweet potatoes, cut into strips .
1/2 c shiitake mushrooms, sliced .
1 dash vanilla .
1 1/2 tbsps dry onion soup mix (I prefer Liptons) .
1/2 c baby portabella mushrooms, sliced
Directions
Step #1 Pre-heat oven to 450 degrees.
Step #2 Place potato strips & mushrooms into a large bowl.
Step #3 Add onion soup mix & a dash of vanilla to taste.
Step #4 Add just enough olive oil to moisten the soup mix so that it adheres to the potatoes.
Step #5 Stir until soup mix is well distributed.
Step #6 Lightly spray a cookie sheet with non-stick olive oil spray.
Step #7 Arrange potato/mushroom mix into one layer on cookie sheet.
Step #8 Bake for about 25 mins until the potatoes are a golden brown.
Step #9 Longer, depending on how crispy you want them.
Step #10 Option: Add zucchini strips or other vegetables as you see fit.
