Healthy Fries Recipe

Ingredients
  • 1/4 c olive oil .
  • 1 c new potatoes, cut into strips .
  • 1 c sweet potatoes, cut into strips .
  • 1/2 c shiitake mushrooms, sliced .
  • 1 dash vanilla .
  • 1 1/2 tbsps dry onion soup mix (I prefer Liptons) .
  • 1/2 c baby portabella mushrooms, sliced

Directions
  • Step #1 Pre-heat oven to 450 degrees.
  • Step #2 Place potato strips & mushrooms into a large bowl.
  • Step #3 Add onion soup mix & a dash of vanilla to taste.
  • Step #4 Add just enough olive oil to moisten the soup mix so that it adheres to the potatoes.
  • Step #5 Stir until soup mix is well distributed.
  • Step #6 Lightly spray a cookie sheet with non-stick olive oil spray.
  • Step #7 Arrange potato/mushroom mix into one layer on cookie sheet.
  • Step #8 Bake for about 25 mins until the potatoes are a golden brown.
  • Step #9 Longer, depending on how crispy you want them.
  • Step #10 Option: Add zucchini strips or other vegetables as you see fit.
