Mary's Oatmeal Bread Recipe

Ingredients
  • 1/4 c butter or margarine .
  • 6-6 1/2 c flour .
  • 2 c oats, uncooked .
  • 1/2 c warm water .
  • 1 1/4 c milk .
  • 1 c cold water .
  • 2 (1/4 oz) packages active dry yeast .
  • 1/4 c sugar .
  • 2 1/2 tsps salt

Directions
  • Step #1 Dissolve the yeast in warm water.
  • Step #2 Combine milk & cold water, then heat in sauce pan.
  • Step #3 Pour the hot liquid over the butter, sugar & salt; stir until butter melts.
  • Step #4 Cool till lukewarm.
  • Step #5 Stir in 2 c flour, dissolved yeast & oats.
  • Step #6 Stir in enough extra flour to make soft dough.
  • Step #7 Turn out onto lightly floured surface; knead about 8-10 mins or until smooth & elastic.
  • Step #8 Shape to form ball; place this in greased bowl, turning to coat surface of dough.
  • Step #9 Cover up & lets rise in warm place for about 1 hr or until double in size.
  • Step #10 Punch dough down.
  • Step #11 Cover up; let rest 10 min Shape to form 2 loaves.
  • Step #12 Place in 2 greased loaf pans (9x5).
  • Step #13 Brush lightly with melted butter.
  • Step #14 Cover up, let rise about 45 min or until nearly doubled in size.
  • Step #15 Bake at 375 degrees for 45-50 min.
