Low-fat Carrot & Coriander Soup Recipe

Ingredients
  • 2 chicken stock cubes, mixed in the boiling water .
  • salt & black pepper .
  • low-fat yogurt, for presentation .
  • 1 liter boiling water .
  • cooking spray .
  • 3/4 c fresh coriander (parsley & chives) .
  • 6 medium sized carrots, peeled & sliced .
  • 325F g tomatoes .
  • 2 medium sized onions, sliced .
  • 1 1/2 tbsps ground coriander

Directions
  • Step #1 Spray a little oil into base of stock pot (although you can dry-fry the onions).
  • Step #2 Add the onions & carefully cook for a few miniutes.
  • Step #3 Add the ground coriander & carefully stir this in, cook for a further min.
  • Step #4 Stir in the tomatoes & carrots & cook for 5 mins.
  • Step #5 Add the chicken stock & plenty of black pepper, according to taste.
  • Step #6 Simmer for 25 mins with the lid on.
  • Step #7 Put the soup through a mixer, mix to preferred consistency.
  • Step #8 Add the coriander (parsley & chives if no coriander is to be found)near the end of the process, so that the leaves are roughly sliced.
  • Step #9 Reheat & season to taste.
  • Step #10 Serve in bowls & swirl in the low fat cream for presentation purposes only.
  • Step #11 Serve with warm crusty bread.
