Shrimp-and-grits Eggs Benedict Recipe

Ingredients
  • Creamy Shrimp Sauce .
  • 1 lb medium shrimp .
  • 1 c whipping cream .
  • 5 c water .
  • Grits & Eggs .
  • 1 lb fresh asparagus .
  • 1 1/2 tbsps flour .
  • 2 1/2 tbsps butter, divided .
  • 1 tbsp vegetable oil .
  • 1 c uncooked quick-cooking grits .
  • 8 large eggs, poached .
  • 3/4 c freshly grated parmesan cheese .
  • 1/3 c all-purpose flour .
  • 1 tbsp butter or margarine .
  • 1 (14 1/2 oz) can chicken broth .
  • 2 tbsps sherry wine .
  • 1 small shallot, sliced .
  • 1/2 tsp salt .
  • 1/2 tsp pepper

Directions
  • Step #1 Bring 5 c water & salt to a boil in a medium saucepan; slowly stir in the grits.
  • Step #2 Cook over med-heat/flame 8 mins or until thickened.
  • Step #3 Whisk in pepper & cheese; spoon into a lightly greased 11- x 7-inch baking dish.
  • Step #4 Cover up & chill 8 hrs.
  • Step #5 Snap off tough ends of asparagus.
  • Step #6 Combine asparagus & water to cover in a saucepan.
  • Step #7 Bring to a boil, & cook 5 mins or until crisp-tender.
  • Step #8 Drain & plunge asparagus into ice water to stop the cooking process.
  • Step #9 Cut grits into 8 (3- x 3-inch) squares.
  • Step #10 Lightly dredge in flour.
  • Step #11 Melt butter with oil In a large-ish nonstick skillet over medium-low heat.
  • Step #12 Cook grits squares, in batches, 3 to 4 mins on each side or until golden.
  • Step #13 Top each square with asparagus, poached egg, & Creamy Shrimp Sauce.
  • Step #14 Serve as soon as possible.
  • Step #15 Garnish, if desired.
  • Step #16 Peel shrimp, reserving shells; devein, if desired.
  • Step #17 Melt 1 tbsp butter in a 3 1/2-quart saucepan over med-heat/flame.
  • Step #18 Add shrimp, & cook 5 mins or just until shrimp turn pink.
  • Step #19 Chop shrimp, & set aside.
  • Step #20 Add shrimp shells, shallot, & chicken broth to saucepan; bring to a boil.
  • Step #21 Remove from heat, cover, & let this stand 30 mins.
  • Step #22 Pour broth mixture through a wire-mesh strainer into a bowl, discarding shells & shallot.
  • Step #23 Melt remaining 1 1/2 tbsps butter in saucepan over med-heat/flame.
  • Step #24 Whisk in flour.
  • Step #25 Cook, whisking constantly, 1 min.
  • Step #26 Gradually whisk in broth mixture.
  • Step #27 Bring to a boil; boil 1 min or until slightly thickened.
  • Step #28 Add cream; reduce heat to low.
  • Step #29 Add sliced shrimp & sherry; stir until thoroughly heated.
