Fillet Of Fish With Green Apple, Raisins And Pecans Recipe

Ingredients
  • 1 tbsp flour .
  • 1/3 c raisins .
  • 1 c granny smith apples, peeled, sliced finely .
  • 1 lb firm white fish fillets .
  • 4 tsps brown sugar or Splenda sugar substitute .
  • 1/4 c pecans or walnuts, sliced .
  • 1/2 tsp cinnamon .
  • 1 tbsp margarine .
  • 1 c apple juice

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 Place fish in single layer in baking dish.
  • Step #3 In nonstick skillet, nuts, raisins, melt margarine, then sauté apple, Splenda & cinnamon for 3 mins or until apples are tender.
  • Step #4 Mix flour with apple juice until dissolved.
  • Step #5 Add to pan & cook this until thickened, stirring constantly, 2 or 3 mins.
  • Step #6 Pour sauce over fish.
  • Step #7 Cover up & bake 15 - 20 mins.
  • Step #8 Fish should flake easily when tested with fork.
