Delicata Creamy Squash Soup Recipe

Ingredients
  • 2 tbsps butter
  • 3 delicata squash, halved lengthwise & seeded
  • salt to taste
  • 1 onion, sliced
  • 1 1/2 c heavy whipping cream
  • ground black pepper to taste
  • 3 c vegetable broth

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 Place the squash, cut sides down, in a baking dish.
  • Step #3 Add 1/8 inch water in baking dish, cover with foil & bake 35-40 mins or until tender.
  • Step #4 Cool.
  • Step #5 In a large saucepan, melt butter.
  • Step #6 Add onion & cook over low heat/flame, stirring every once in awhile until onion is softened but not brown.
  • Step #7 Scrape the squash out of the flesh & add to onions.
  • Step #8 Add the stock & heavy cream.
  • Step #9 Cook over moderate heat, stirring every once in awhile, about 25 mins.
  • Step #10 Puree the soup in a mixer or food processor/blender.
  • Step #11 Spice up with salt & pepper to taste & serve.
