Ingredients
3 tbsps vegetable oil .
1/4 c vodka .
salt & freshly ground black pepper .
15 oz sliced tomatoes .
1 lb thinly-sliced chicken breasts (4) .
1/2 c chicken broth .
1 lime, juice of .
1 tsp cornstarch .
1 tbsp cold water .
2 tbsps sliced fresh cilantro .
1/4 c all-purpose flour .
2 tbsps minced pickled jalapeno peppers
Directions
Step #1 Preheat oven to 200 degrees.
Step #2 Spice up both sides of each chicken breast with salt & pepper.
Step #3 Place the flour on a plate & dredge the chicken breasts through it, lightly coating both sides.
Step #4 Set aside.
Step #5 In a large skillet heat the oil over a medium-high heat.
Step #6 Add the breasts & cook 3 mins, or until lightly browned.
Step #7 Flip & cook another 2 to 3 mins, or until cooked through.
Step #8 Transfer the chicken to an oven-proof plate & place this in the oven to keep warm.
Step #9 Return the empty skillet to the burner.
Step #10 Increase heat to high & add the chicken broth & vodka to deglaze the pan.
Step #11 As the liquid bubbles, scrape the bottom of the skillet with a wooden spoon.
Step #12 Add half of the lime juice & the jalapenos & cook 30 seconds.
Step #13 Add the tomatoes & bring to a simmer.
Step #14 In a small glass, mix the cornstarch with the water, then add to the skillet.
Step #15 Cook, stirring constantly, until thickened, about 2 mins.
Step #16 Remove the skillet from the heat.
Step #17 Stir in remaining lime juice.
Step #18 Arrange each chicken breast on a plate & top this with pan sauce.
Step #19 Garnish with cilantro.
