Spicy Chicken Cutlets Recipe

Ingredients
  • 3 tbsps vegetable oil .
  • 1/4 c vodka .
  • salt & freshly ground black pepper .
  • 15 oz sliced tomatoes .
  • 1 lb thinly-sliced chicken breasts (4) .
  • 1/2 c chicken broth .
  • 1 lime, juice of .
  • 1 tsp cornstarch .
  • 1 tbsp cold water .
  • 2 tbsps sliced fresh cilantro .
  • 1/4 c all-purpose flour .
  • 2 tbsps minced pickled jalapeno peppers

Directions
  • Step #1 Preheat oven to 200 degrees.
  • Step #2 Spice up both sides of each chicken breast with salt & pepper.
  • Step #3 Place the flour on a plate & dredge the chicken breasts through it, lightly coating both sides.
  • Step #4 Set aside.
  • Step #5 In a large skillet heat the oil over a medium-high heat.
  • Step #6 Add the breasts & cook 3 mins, or until lightly browned.
  • Step #7 Flip & cook another 2 to 3 mins, or until cooked through.
  • Step #8 Transfer the chicken to an oven-proof plate & place this in the oven to keep warm.
  • Step #9 Return the empty skillet to the burner.
  • Step #10 Increase heat to high & add the chicken broth & vodka to deglaze the pan.
  • Step #11 As the liquid bubbles, scrape the bottom of the skillet with a wooden spoon.
  • Step #12 Add half of the lime juice & the jalapenos & cook 30 seconds.
  • Step #13 Add the tomatoes & bring to a simmer.
  • Step #14 In a small glass, mix the cornstarch with the water, then add to the skillet.
  • Step #15 Cook, stirring constantly, until thickened, about 2 mins.
  • Step #16 Remove the skillet from the heat.
  • Step #17 Stir in remaining lime juice.
  • Step #18 Arrange each chicken breast on a plate & top this with pan sauce.
  • Step #19 Garnish with cilantro.
