Cream Of Asparagus And Leek Soup Recipe

Ingredients
  • 2 tbsps butter .
  • 1 lb leeks .
  • 1/8 tsp white pepper .
  • 1 c light cream .
  • 1 lb asparagus, sliced in 1-inch pieces .
  • 6 c chicken stock .
  • 1 large onion, sliced .
  • 2 stalks celery, finely sliced .
  • 1/2 c white wine

Directions
  • Step #1 Trim green part of leeks & discard.
  • Step #2 Thoroughly wash white portion & finely chop.
  • Step #3 (I find it best to completely separate the layers.
  • Step #4 ).
  • Step #5 In large pot, saute leek, onion, & celery in butter & add white wine to keep vegetables moist.
  • Step #6 (You can alternately do this with some of the chicken stock.
  • Step #7 ).
  • Step #8 Add asparagus & 4 c of the chicken stock.
  • Step #9 Spice up with pepper.
  • Step #10 Simmer for 1/2 hr or until vegetables are tender.
  • Step #11 Puree the soup in small batches adding the remainder of the stock.
  • Step #12 In another pot reheat (but not boil) the puree while whisking in the cream (or milk.
  • Step #13 ).
  • Step #14 Serve as soon as possible.
