Chocolate Cherry Chip Cake Recipe

Ingredients
  • 1 c milk .
  • 1/2 tsp salt .
  • 1 tsp baking powder .
  • 2 tbsps vanilla extract .
  • 2 eggs .
  • 2 tsps vanilla extract .
  • 2 c miniature semisweet chocolate chips .
  • Frosting .
  • 1/2 tsp salt .
  • 1 c strong brewed coffee .
  • 1 (10 oz) jar maraschino cherries, drained .
  • 2 c all-purpose flour .
  • 2 c white sugar .
  • 4 c confectioners' sugar .
  • 1/2 c butter, softened .
  • 2 tsps baking soda .
  • 3/4 c unsweetened cocoa powder .
  • Cake .
  • 1/2 c vegetable oil .
  • 4 tbsps milk

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Place a piece of parchment paper on the bottom of a 9 X 13 inch pan.
  • Step #3 Grease & flour the pan.
  • Step #4 In a large bowl, sugar, cocoa, baking powder, mix flour, soda & salt.
  • Step #5 Add eggs, coffee, milk, oil & vanilla.
  • Step #6 Beat until smooth (batter will be thin).
  • Step #7 Fold in cherries & chocolate chips.
  • Step #8 Pour batter into 9x13 inch pan.
  • Step #9 Bake at 350 degrees F for 35 mins or until toothpick inserted into middle comes out clean.
  • Step #10 It's best to leave it in the pan, because the chips & the cherries sort of sink to the bottom & solidify & may stick.
  • Step #11 (If you want to take it out of the pan, you are safe if you use the parchment paper as suggested in step #2~!).
  • Step #12 For the frosting: In a large bowl, confectioners sugar, mix butter, 1/2 tsp salt & vanilla.
  • Step #13 Cream with an electric mixer.
  • Step #14 Add milk by the tbsp until frosting is smooth.
