Chunky Peach Spread Recipe

Ingredients
  • 1 tbsp lemon juice
  • 1/4 c cold water
  • 1/3 c sugar
  • 7 peaches
  • 1 (.25 oz) envelope unflavored gelatin

Directions
  • Step #1 Drop peaches in boiling water for 1 min or until peel has softened.
  • Step #2 Immediately dip fruit in ice water.
  • Step #3 Peel & chop peaches.
  • Step #4 In a large saucepan, mix the peaches, sugar & lemon juice.
  • Step #5 Bring to a boil.
  • Step #6 Mash peaches.
  • Step #7 Reduce heat; simmer, uncovered, or 5 mins.
  • Step #8 Meanwhile, in a small bowl, sprinkle gelatin over cold water; let this stand for 2 mins.
  • Step #9 Remove peach mixture from the heat; stir in the gelatin mixture until dissolved.
  • Step #10 Cool for 10 mins.
  • Step #11 Pour into jars.
  • Step #12 Refrigerate for up to 3 weeks.
