Crock Pot Chicken Enchiladas Recipe

Ingredients
  • 12 oz red enchilada sauce .
  • 2/3 oz italian seasoning .
  • 1 (8 oz) package cream cheese .
  • 4 oz olives, sliced .
  • 10 flour tortillas .
  • 2 c Mexican mix cheese .
  • 10 oz cream of mushroom soup .
  • 6 oz green chilies .
  • 1 onion .
  • 1 lb boneless skinless chicken breasts

Directions
  • Step #1 add a small amount of water to the bottom of your crock pot, Italian seasoning, onion, then add the chicken breasts, & green chiles.
  • Step #2 cook on medium for 4-6 hrs.
  • Step #3 The chicken should be tender enough to shred.
  • Step #4 Take it out of the crock pot into a large bowl & mix it with the cream cheese & set aside.
  • Step #5 In the crock pot pour enchilada sauce.
  • Step #6 Then rip the tortillas into strips & set in the sauce.
  • Step #7 Layer the rest of the ingredients in this order- cream of mushroom soup, cheese, chicken, & the olives on the top.
  • Step #8 Let this cook for an hr or two & serve.
  • Step #9 Great with Sour cream on top.
