Step #1 Chop all vegetables by hand or in a food processor/blender.
Step #2 Heat olive oil & cook garlic until golden brown & fragrant.
Step #3 Add onion & saute.
Step #4 When cooked, add carrots & broccoli.
Step #5 Add cream of mushroom soup & soy milk.
Step #6 Cook until it become smooth, then add rice.
Step #7 Mix well.
Step #8 Sprinkle top salt & pepper to taste, if desired.
Step #9 Pour the mixture into a casserole dish & put mayonnaise on top (using fine-tipped mayonnaise dispensor or plastic bag with a hole at one corner).
