Veggie & Rice Casserole Recipe

Ingredients
  • 2 c rice, cooked .
  • 1/2 c soy milk .
  • 1 tsp garlic, finely choppsed .
  • 1 bunch broccoli, sliced .
  • 1 tbsp olive oil .
  • 1 1/2 medium onions, sliced .
  • 1 (10 3/4 oz) can cream of mushroom soup .
  • salt & pepper .
  • 2 carrots, sliced .
  • 1 tbsp vegetarian mayonnaise

Directions
  • Step #1 Chop all vegetables by hand or in a food processor/blender.
  • Step #2 Heat olive oil & cook garlic until golden brown & fragrant.
  • Step #3 Add onion & saute.
  • Step #4 When cooked, add carrots & broccoli.
  • Step #5 Add cream of mushroom soup & soy milk.
  • Step #6 Cook until it become smooth, then add rice.
  • Step #7 Mix well.
  • Step #8 Sprinkle top salt & pepper to taste, if desired.
  • Step #9 Pour the mixture into a casserole dish & put mayonnaise on top (using fine-tipped mayonnaise dispensor or plastic bag with a hole at one corner).
  • Step #10 Bake at 375F for 25-30 mins.
