Different 3 Bean Salad! Recipe

Ingredients
  • 1 tsp ground cumin .
  • 1 1/2 c shelled frozen edamame .
  • 1 (15 oz) can black beans, drained & rinsed .
  • 2 tbsps fresh lime juice .
  • 1 1/2 tsps salt .
  • 1/2 c red onions, sliced .
  • 2 c celery, thinly sliced .
  • 1/4 c olive oil .
  • 1 (15 oz) can black-eyed peas, drained & rinsed .
  • 1/4 tsp black pepper .
  • 1 tsp garlic, finely sliced .
  • 1/2 c cilantro, sliced

Directions
  • Step #1 Cook edamame uncovered for 4 mins.
  • Step #2 Drain in a colander, then rinse under cold water to stop cooking.
  • Step #3 Heat oil in a small heavy skillet over moderately low heat until hot but not smoking, stirring until fragrant & a shade darker, then cook cumin, about 30 seconds.
  • Step #4 Pour into large heatproof bowl.
  • Step #5 Add edamame & remaining ingredients to cumin oil & toss to coat.
  • Step #6 Let stand for 10 mins before serving.
