Grand Marnier Soufflés For Two Recipe

Ingredients
  • Egg White Mixture .
  • 1/4 c sugar .
  • Custard .
  • 1/4 tsp salt .
  • 1 c milk .
  • 4 tbsps cornstarch .
  • 1 tbsp butter, melted .
  • 1/4 c sugar .
  • 4 egg yolks .
  • 1 tsp vanilla extract .
  • 1/4 c all-purpose flour .
  • 2 tbsps brown sugar .
  • 2 egg whites .
  • 1/4 c Grand Marnier .
  • 2 tbsps orange zest, freshly grated

Directions
  • Step #1 Brush 2 tall ramekins with melted butter.
  • Step #2 Press brown sugar carefully into all sides of the ramekins.
  • Step #3 Refrigerate until ready to use.
  • Step #4 In a small saucepan, bring ¾ c of the milk & the vanilla to the boil over med-heat/flame.
  • Step #5 Remove from heat & set aside.
  • Step #6 In a small bowl, mix the cornstarch & the remaining ¼ c milk until smooth.
  • Step #7 Add ¼ c of the sugar, 2 egg yolks & salt.
  • Step #8 Stir until smooth.
  • Step #9 Gradually whisk this mixture into the warm milk.
  • Step #10 Cook over medium-low heat stirring constantly until the mixture thickens, approximately 4 mins.
  • Step #11 Remove from heat & cool in refrigerator or freezer until slightly chilled, about 10 mins.
  • Step #12 Beat in remaining 2 yolks.
  • Step #13 Using a sifter, sift flour over mixture & stir well.
  • Step #14 Return to medium heat & stir constantly until smooth.
  • Step #15 Remove from heat.
  • Step #16 Add liqueur & orange zest.
  • Step #17 Scrape custard into a large bowl & set aside to cool until ready to prepare soufflés.
  • Step #18 Preheat oven to 400F degrees.
  • Step #19 Beat whites until soft peaks form.
  • Step #20 Gradually add in the remaining sugar & beat until firm peaks form.
  • Step #21 Fold whites into cooled custard.
  • Step #22 Spoon mixture into the ramekins leaving about ½ to 1 inch head space.
  • Step #23 Bake for 20 mins until puffed & browned on top.
  • Step #24 Serve as soon as possible.
