Szechuan Ratatouille Recipe

Ingredients
  • 2 c button mushrooms, sliced .
  • 2 tsps vegetable oil .
  • 1 lb chinese noodles, cooked .
  • 3/4 c vegetable stock or water .
  • 2 c zucchini, sliced .
  • 1 tsp sesame oil .
  • 2 tbsps hoisin sauce .
  • 1/4 c fresh cilantro, minced (optional) .
  • 1/2 c tomato sauce .
  • 6 garlic cloves, minced .
  • 1/4 c mirin (Chinese cooking wine) .
  • 2 tbsps tamari .
  • 2 tbsps bean sauce .
  • 1/2 tsp Chinese chili sauce .
  • 1 tbsp gingerroot, grated .
  • 1 medium onion, sliced .
  • 1 tbsp rice vinegar .
  • 2 c eggplants, cubed

Directions
  • Step #1 Heat vegetable oil & sesame oil In a large-ish saucepan.
  • Step #2 Add onion, garlic & ginger & sauté over med-heat/flame 5 mins.
  • Step #3 Add zucchini, mushrooms & eggplant & sauté 8 to 10 mins until vegetables soften.
  • Step #4 Stir in remaining ingredients & bring to a boil.
  • Step #5 Reduce heat & continue cooking, uncovered, 15 to 20 mins until vegetables are tender.
  • Step #6 Serve over Chinese noodles.
  • Step #7 Garnish with fresh cilantro, if desired.
