Lemon And Basil Eggs Over Foccacia Recipe

Ingredients
  • 1 c milk .
  • 1 large focaccia bread .
  • 1/4 tsp salt .
  • 3 eggs .
  • 1/4 c grated parmesan cheese .
  • 1/4 c sliced fresh basil leaves .
  • 2 tbsps meyer lemon-infused olive oil (or 2 tbsps extra-virgin olive oil mixd with 1 tsp lemon juice) .
  • 1/2 tsp fresh ground black pepper

Directions
  • Step #1 Preheat the oven to 350 degrees F.
  • Step #2 Cut the top off the foccacia & hollow out the bread inside.
  • Step #3 Tear the top of the foccacia & the Inside bread into 1-inch pieces & save for the egg mixture.
  • Step #4 Brush the inside of the foccacia with The Meyer lemon olive oil.
  • Step #5 Place on a baking sheet & toast for 10 mins.
  • Step #6 Meanwhile, In a large-ish bowl, whisk the eggs.
  • Step #7 Add the basil, cheese, salt, pepper, & milk.
  • Step #8 Whisk Lightly.
  • Step #9 Stir in up to 4 c of the bread pieces.
  • Step #10 Carefully pour the egg mixture into the toasted foccacia bottom.
  • Step #11 Return to the oven & bake this until The eggs have cooked, about 35 to 40 mins.
  • Step #12 Cut the baked foccacia into 6 to 8 pieces & serve as soon as possible.
