Red Lettuce And Roasted Beet Salad With Walnuts And Blue Cheese Recipe

Ingredients
  • 1/2 c walnuts .
  • 2 tbsps vegetable oil .
  • 5 tbsps toasted walnut oil, divided .
  • 8 c mixed salad greens, see note .
  • 3 oz blue cheese, crumbled .
  • 2 c cubed whole grain bread .
  • 10 baby beets, trimmed .
  • 1/4 c shallots, sliced .
  • 2 tbsps red wine vinegar

Directions
  • Step #1 Note: Lettuces: lolla rossa, red butter lettuce, red belgin endive & [or] radicchio leaves.
  • Step #2 The more variety? The better the taste.
  • Step #3 Preheat oven to 375F Arrange beets in center of sheet of foil wrap.
  • Step #4 Drizzle with oil & enclose in foil wrap.
  • Step #5 Roast one hr or until beets are tender then cool, peel & quarter.
  • Step #6 Heat 2 tbsp walnut oil in skillet over med heat.
  • Step #7 Add bread, & saute 4 mins or until golden brown.
  • Step #8 Transfer to plate to cool.
  • Step #9 Combine remaining 3 tbsp walnuts, oil, vinegar & shallots in small bowl.
  • Step #10 Spice up with salt & pepper.
  • Step #11 Toss beets with half of the dressing in small bowl.
  • Step #12 Toss greens with remaining dressing in large bowl.
  • Step #13 Sprinkle top salad with croutons & blue cheese.
  • Step #14 Mound beets in center of greens Sprinkle top with walnuts.
  • Step #15 Serve.
