Indian Lentil Soup Recipe

Ingredients
  • 4 1/2 tbsps water .
  • 5 garlic cloves, peeled .
  • 2 1/2 inches fresh ginger, peeled & sliced .
  • 3 c green lentils, washed .
  • 2 large potatoes .
  • 2 tbsps lemon juice .
  • 2 (32 oz) boxes chicken stock .
  • 1/2 tsp cayenne pepper .
  • 3 tbsps vegetable oil .
  • 1 tsp salt .
  • 4 chicken breasts, boiled & cut into 1/2-inch cubes .
  • 1 tsp ground turmeric .
  • 2 tsps ground coriander .
  • 2 tsps ground cumin .
  • 1 tsp black pepper .
  • 1 (14 1/2 oz) can chicken stock

Directions
  • Step #1 Combine the lentils, 2 boxes of chicken stock & turmeric in a heavy pot & bring to a boil.
  • Step #2 Cover up, leaving the lid slightly ajar, turn heat to low & let simmer for 30 mins.
  • Step #3 While soup simmers, peel potatoes & cut into 1/2-inch cubes.
  • Step #4 When soup has cooked for 30 mins, add cut potato.
  • Step #5 Cover up, leaving the lid slightly ajar again, & continue simmering for another 30 mins.
  • Step #6 During the second simmering period, put the garlic & ginger into an electric mixer.
  • Step #7 Add 4 1/2 T water & mix until you have a smooth paste.
  • Step #8 (I used a food processor/blender for this step.
  • Step #9 You don't need it to be a paste but it should be finely sliced.
  • Step #10 ).
  • Step #11 Once the soup base has finished cooking it needs to be pureed.
  • Step #12 Blender 3 batches.
  • Step #13 (I left one batch unmixed to give the soup more texture.
  • Step #14 ) Put pureed soup In a large-ish bowl & set aside.
  • Step #15 Rinse & wipe out your soup pot.
  • Step #16 Place cooked & cubed chicken in a separate bowl & sprinkle with salt & pepper.
  • Step #17 Toss to mix.
  • Step #18 Next, pour oil into soup pot & set over med-heat/flame.
  • Step #19 When oil is hot, put in the garlic/ginger paste, cumin, coriander & cayenne.
  • Step #20 Fry, stirring continuously, until the spice mixture is slightly browned & separates from the oil.
  • Step #21 Put in chicken pieces & fry for 1-2 mins.
  • Step #22 Add 14 1/2 oz.
  • Step #23 chicken stock & bring to boil.
  • Step #24 Cover up & turn heat to low; simmer for 5 mins.
  • Step #25 Pour in pureed soup & lemon juice.
  • Step #26 Bring to a simmer & serve.
