Vegetarian Black Bean Chili Recipe

Ingredients
  • 2 c sweet onions, sliced .
  • 1 tbsp chili powder .
  • 2 tbsps brown sugar .
  • 3 garlic cloves, minced .
  • 2 (14 1/2 oz) cans sliced tomatoes, undrained .
  • 2 tsps ground cumin .
  • 1 large red pepper, sliced .
  • 2 tbsps canola oil .
  • 1 (15 oz) can tomato sauce .
  • 1/2 lb mushrooms, sliced .
  • 2 (15 oz) cans black beans, rinsed & drained .
  • 1 (6 oz) can tomato paste .
  • 1 dash hot pepper sauce .
  • 1 large yellow pepper, sliced .
  • 1 large green pepper, sliced

Directions
  • Step #1 In a large pot, saute onions in oil for 5 mins.
  • Step #2 Add mushrooms, peppers, & garlic; saute 5-6 mins, until vegetables are crisp-tender.
  • Step #3 Stir in remaining ingredients; bring to a boil.
  • Step #4 Reduce heat; cover & let simmer 20-25 mins, until heated through.
