Cinnamon Loaf Recipe

Ingredients
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 1/8 c sugar, divided
  • 1 c 1% buttermilk
  • 1 tsp ground cinnamon
  • 1/4 c butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 c all-purpose flour
  • 1/2 tsp baking soda

Directions
  • Step #1 In a large mixing bowl, beat butter until light & fluffy, about 1 min.
  • Step #2 Gradually beat in 1 c sugar.
  • Step #3 Add eggs, one at a time, beating well after each addition.
  • Step #4 Stir in vanilla.
  • Step #5 Combine the flour, baking powder, baking soda & salt.
  • Step #6 Add to creamed mixture alternately with buttermilk just until mixed.
  • Step #7 Transfer half of the mixture to a 9-in.
  • Step #8 x 5-in.
  • Step #9 x 3-in.
  • Step #10 loaf pan coated with nonstick cooking spray.
  • Step #11 Combine cinnamon & remaining sugar.
  • Step #12 Sprinkle top three-fourths of mixture over batter.
  • Step #13 Top with remaining butter & sprinkle with remaining cinnamon mixture.
  • Step #14 Bake at 350 degrees F for 45-50 mins or until a toothpick inserted near the center comes out clean.
  • Step #15 Cool for 10 mins before removing from pan to a wire rack to cool completely.
