H.p. Steak Sauce Recipe

Ingredients
  • 1 tsp coarse salt .
  • 1/2 tsp whole black peppercorns .
  • 1/2 tsp garlic powder .
  • 3 tbsps tamarind pulp .
  • 1/2 tsp whole cloves .
  • 3/4 c dark corn syrup .
  • 1 c water .
  • 1/2 tsp cardamom (ground) .
  • 1/2 c tomato paste (1 small can) .
  • 1/4 c pitted dates (sliced fine) .
  • 3/4 c apple cider vinegar .
  • 1 c white vinegar .
  • 1/2 tsp mustard seeds .
  • 1 inch cinnamon sticks .
  • 3 tbsps apple juice .
  • 1/2 tsp onion powder .
  • 3 tbsps blackstrap molasses .
  • 1/4 c frozen orange juice concentrate

Directions
  • Step #1 In a large pot, Molasses, Tomato Paste, Dates,White Vinegar, Apple juice, Corn Syrup, add Water, Orange Juice concentrate, & Tamarind Pulp.
  • Step #2 Stir to mix.
  • Step #3 Over medium heat & covered, bring mixture to a boil.
  • Step #4 Reduce heat to a slow simmer & let simmer covered for 15 - 20 mins.
  • Step #5 Using a spice grinder, Garlic Powder, Cardamon, Mustard Seed, Cloves, Salt, thoroughly grind Onion Powder, Cayenne, Black Peppercrns, & Cinnamon.
  • Step #6 After simmering in step #1, use an immersion Blender to puree' mixture & reduce lumps.
  • Step #7 Add ground spice mixture to pot, stir this to mix & let simmer (covered) for another 30 - 45 mins.
  • Step #8 Add Cider Vinegar to pot, stir this to mix & return to a simmer.
  • Step #9 When pot has reached a simmer, remove this from heat & strain hot mixture through a wire strainer into a clean pot.
  • Step #10 Keep liquid, discard pulp.
  • Step #11 Rinse original pot & restrain mixture back into original pot, return to heat & let simmer until thick.
  • Step #12 Ladel hot sauce mixture into hot, prepared sealable bottles & seal.
  • Step #13 Allow to cool.
  • Step #14 Keeps indefinately in cboard, refridgerate after opening.
