9-layer Mexican Dip Recipe

Ingredients
  • 6 oz green pimento stuffed olives, sliced .
  • 2 beefsteak tomatoes, coarsely sliced .
  • 32 oz all-natural sour cream (I like Daisy) .
  • 3 (16 oz) cans refried black beans (I like La Preferida 99% Fat-Free) .
  • 3 c lettuce, shredded .
  • 12 oz all-natural guacamole (I like Calavo) .
  • 8 oz black olives, sliced .
  • 1 (16 oz) jar all-natural salsa (I prefer Frog Ranch Chipotle) .
  • Assorted toppings to taste .
  • 2 c finely shredded cheddar cheese .
  • 2-4 green onions, coarsely sliced

Directions
  • Step #1 In large mixing bowl, mix refried beans & salsa.
  • Step #2 Consistency should be that of cake frosting--spreadable but not thick.
  • Step #3 Adjust amount of salsa accordingly.
  • Step #4 Spread bean & salsa mixture onto serving platter.
  • Step #5 (I use the back of a metal serving spoon.
  • Step #6 ).
  • Step #7 Layer remaining ingredients.
  • Step #8 Serve with Baked Tostitos Scoops Tortilla Chips.
  • Step #9 NOTES: Also great as a meal.
  • Step #10 Even my green-veggie-phobic children devour this dish! This recipe is moderately spicy.
  • Step #11 Change the heat of the salsa to adjust.
  • Step #12 You could also top this with jalapenos or other hot peppers to add more heat.
  • Step #13 I sometimes use different greens (prepackaged salad mixes) instead of iceberg lettuce & use different cheeses (pepperjack kicks it up a few notches!).
