Saffron Cake Recipe

Ingredients
  • 1 tbsp shortening .
  • 1/4 c candied lemon peel or citron .
  • 1/4 c sugar .
  • 2 c flour .
  • 3/4 c currants .
  • 1 tsp salt .
  • 1/2 c shortening .
  • 1 cake yeast .
  • 1/4 oz saffron

Directions
  • Step #1 Pour about one c of boiling water over the saffron & let it cool & mix with the sugar, salt, & yeast.
  • Step #2 When yeast has dissolved & shortening has softened, mix in flour & fruit (currants & lemon).
  • Step #3 Let rise 1 1/2 hr in the bowl.
  • Step #4 Put in greased bread pan to rise for 1/2 hr before baking.
  • Step #5 Bake in a 350 degree F oven for 45 mins.
