Non-alcoholic Chicken Marsala Recipe

Ingredients
  • 4 boneless skinless chicken breast halves .
  • 2 tbsps butter .
  • 2 tbsps fresh parsley, sliced .
  • 2 c sliced mushrooms .
  • 2 tbsps oil .
  • 1/4 c all-purpose flour .
  • salt & pepper

Directions
  • Step #1 Trim the fat from the breasts & remove the white tendons running through the tenderloins.
  • Step #2 Place each breast between sheets of wax paper & carefully lb with a meat mallet until less than 1/4 inch thick.
  • Step #3 Dust the chicken with the flour until well coated on all sides.
  • Step #4 Sprinkle top with salt & pepper.
  • Step #5 Heat the oil In a large-ish skillet over medium-high heat until very hot but not smoking.
  • Step #6 Use the tongs to add the chicken breasts in a single layer & saute for 3 to 4 mins on each side, until firm.
  • Step #7 Remove to a serving platter & cover with aluminum foil wrap to keep warm.
  • Step #8 Add the mushrooms to the skillet & saute until the mushrooms have given up their juice, about 8 mins.
  • Step #9 Stir in the parsley.
  • Step #10 Spice up to taste witih salt & pepper.
  • Step #11 Remove from the heat & whisk in the butter, 1 T at a time.
  • Step #12 Pour the sauce over the chicken & serve as soon as possible.
