Fruity Oatmeal Pancakes (eggless & Dairy Free) Recipe

Ingredients
  • 1/4 tsp salt .
  • 3/4 c pulp free orange juice .
  • 10 strawberries, mashed .
  • 1 c rice milk .
  • 2/3 c whole wheat flour .
  • 1 banana, mashed .
  • 1 tbsp sugar .
  • 1 c oat flour .
  • 1/2 pint blueberries .
  • 1 tbsp baking powder

Directions
  • Step #1 If you can't find oatmeal flour, you can make your own by grinding up Quaker Oatmeal in your mixer until it is a fine powder.
  • Step #2 Don't have oatmeal either, you can use white flour as a substitute.
  • Step #3 Mix first 5 dry ingredients together In a large-ish mixing bowl.
  • Step #4 Mash your banana & strawberries together in a seperate bowl.
  • Step #5 Add whole blueberries, milk & OJ to the banana mix & stir this together.
  • Step #6 Pour fruit mixture into the dry ingredients & stir until moist.
  • Step #7 Add more milk or juice if you like a thinner batter.
  • Step #8 Set batter aside for 10 mins.
  • Step #9 Preheat your griddle to 350 degrees.
  • Step #10 Pour 1/4 c batter on griddle & cook for approximately 3-4 mins or until the bottom side is golden or the top of the pancake starts to bubble.
  • Step #11 Flip & cook on other side until golden brown, approximately 3 mins.
  • Step #12 Serve with butter & syrup, honey or fresh fruit on top.
