Hoisin Noodle Stir-fry Recipe

Ingredients
  • 2 tbsps cold water .
  • 4 bunches bok choy (4 lbs) .
  • 1/3 c hoisin sauce .
  • 2 garlic cloves, crushed .
  • 2 tbsps vegetable oil .
  • Marinade .
  • 1 tbsp honey .
  • 2 tbsps dry sherry .
  • 1 red bell pepper, thinly sliced .
  • 1 tbsp cornstarch .
  • 1 yellow pepper, thinly sliced .
  • 2 garlic cloves, crushed .
  • Chicken .
  • 1 green pepper, thinly sliced .
  • 2 tbsps soy sauce .
  • 1/4 tsp Chinese five spice powder .
  • 2 onions, sliced lengthwise .
  • 4 boneless skinless chicken breasts, thinly sliced .
  • 1 lb egg noodles, fresh (I use yaki soba)

Directions
  • Step #1 Combine all the marinade ingredients & the chicken in a dish & mix well.
  • Step #2 Cover up & put in the fridge for several hrs or overnight.
  • Step #3 Drain the chicken from the marinade, reserve marinade.
  • Step #4 Add the noodles to a pan of boiling water & let simmer, uncovered for 3 mins; drain.
  • Step #5 Heat the oil in a wok or large pan, add the chicken in batches & cook, stirring, until the chicken is browned & tender; remove this from the wok.
  • Step #6 Reheat the wok, stirring, add the onions & garlic & cook, until the onion is soft.
  • Step #7 Add the bok choy & bell peppers & cook, stirring, until the bok choy is wilted.
  • Step #8 Add the noodles, toss well & then transfer to serving plates.
  • Step #9 Blend the reserved marinade with the cornstarch & water.
  • Step #10 Add to the wok & cook, stirring, until the mixture boils & thickens.
  • Step #11 Return the chicken to the wok & stir-fry until heated through.
  • Step #12 Spoon onto the bok choy mixture on the serving plates.
  • Step #13 This recipe can be prepared a day ahead.
