Step #1 Combine all the marinade ingredients & the chicken in a dish & mix well.
Step #2 Cover up & put in the fridge for several hrs or overnight.
Step #3 Drain the chicken from the marinade, reserve marinade.
Step #4 Add the noodles to a pan of boiling water & let simmer, uncovered for 3 mins; drain.
Step #5 Heat the oil in a wok or large pan, add the chicken in batches & cook, stirring, until the chicken is browned & tender; remove this from the wok.
Step #6 Reheat the wok, stirring, add the onions & garlic & cook, until the onion is soft.
Step #7 Add the bok choy & bell peppers & cook, stirring, until the bok choy is wilted.
Step #8 Add the noodles, toss well & then transfer to serving plates.
Step #9 Blend the reserved marinade with the cornstarch & water.
Step #10 Add to the wok & cook, stirring, until the mixture boils & thickens.
Step #11 Return the chicken to the wok & stir-fry until heated through.
Step #12 Spoon onto the bok choy mixture on the serving plates.
