Improvised Thai Stir-fried Rice
Ingredients
2 tbsps toasted sesame seeds .
2 spring onions, sliced .
1 tsp clear honey .
1/2 c cashew nuts, sliced .
2 tbsps sesame oil .
1 1/4 c bean sprouts (or sprouted lentils) .
2 tbsps fresh lime juice .
2 tsps grated fresh ginger .
salt & pepper .
2 tbsps light soy sauce .
1 small red chili, seeded & sliced .
1 tbsp wine vinegar .
2 canned pineapple rings, sliced .
1 c fragrant Thai rice .
3 tbsps pineapple juice .
1 garlic clove, crushed
Directions
Step #1 Soak the Thai fragrant rice for 20 mins, then rinse in several changes of water.
Step #2 Drain, then boil in salted water for 10-20 mins until tender.
Step #3 Drain & set aside.
Step #4 Whisk together the lime juice, ginger, garlic, honey, sesame oil, chilli, soy sauce, pineapple juice & wine vinegar In a large-ish bowl.
Step #5 Stir in the rice.
Step #6 Add the spring onions, sprouted lentils or bean sprouts, pineapple rings, red pepper, celery, cashew nuts & the toasted sesame seeds & mix well.
Step #7 If the rice grains stick together on cooling, simply stir them with a metal spoon.
Step #8 This dish can be served warm or at about room temp & is a good accompaniment to grilled or barbecued meats & fish.
