Cuban Ahi With Banana-mango Chutney Recipe

Ingredients
  • 3/4 c cider vinegar .
  • 2 tsps Madras curry powder .
  • 1/2 tsp ground cinnamon .
  • 1/4 tsp minced garlic .
  • 6 medium bananas, sliced, divided .
  • 12 oz mangoes, slices divided .
  • 3/4 c firmly packed brown sugar .
  • 4 (7 oz) ahi tuna steaks .
  • 1/4 c golden seedless raisins .
  • 1/8 tsp ground red pepper or red pepper flakes (we prefer the flakes)

Directions
  • Step #1 Combine vinegar, curry powder, sugar, pepper, cinnamon & minced garlic in a saucepan.
  • Step #2 Heat to simmer, stirring & cook for 1 min.
  • Step #3 Peel 4 bananas, slice & add to saucepan.
  • Step #4 Add 1 c sliced mangoes.
  • Step #5 Heat fruit mixture & let simmer, uncovered, 10 mins, stirring every once in awhile until mixture thickens.
  • Step #6 Slice & add in the remaining bananas to chutney.
  • Step #7 Add remaining sliced mangoes & raisins.
  • Step #8 Stir to mix well, remove this from heat, cover & let this stand 30 mins.
  • Step #9 In a hot, non-stick saute pan or grill, sear Ahi steaks until dark brown on all four sides, keeping them rare in the center.
