Spicy Bean & Lentil Loaf Recipe

Ingredients
  • 1 tbsp ketchup .
  • 1/2 c cheddar cheese, finely grated .
  • 1 carrot, coarsely grated .
  • 1 tsp chili powder .
  • 1 tsp ground coriander .
  • 1 tsp ground cumin .
  • 14 oz kidney beans, canned .
  • 1 egg .
  • 2 tsps olive oil .
  • 14 oz lentils, canned .
  • 1 c breadcrumbs .
  • 1 garlic clove, crushed .
  • 1 tbsp tomato paste .
  • 1 onion, finely sliced .
  • 2 celery ribs, finely sliced

Directions
  • Step #1 Preheat the oven to 350°F Lightly grease a 9"x5"x3" loaf pan.
  • Step #2 Heat the oil in a frying pan, add the onion, garlic & celery & cook carefully for 5 mins, stirring every once in awhile.
  • Step #3 Remove the pan from the heat & cool slightly.
  • Step #4 Rince & drain the beans & lentils.
  • Step #5 Place in a food processor/blender with the onion mixture & egg & process until smooth.
  • Step #6 Transfer the mixture to a bowl, add all the remaining ingredients & mix well.
  • Step #7 Spice up with salt & pepper to taste.
  • Step #8 Spoon the mixture into the prepared loaf pan & level the surface.
  • Step #9 Bake for about 1 hr, then remove this from the pan & cut into slices to serve.
  • Step #10 Can be eaten hot or cold.
