Fast And Easy Chicken Noodle Soup Recipe

Ingredients
  • 2 bay leaves .
  • 2 whole boneless skinless chicken breasts .
  • 1 c carrots, sliced .
  • 2 tbsps olive oil or butter .
  • 1/2 tsp herbes de provence .
  • 1/4 tsp powdered dried rosemary .
  • 1/2 tsp dried thyme .
  • roux or flour, slurry to thicken broth .
  • 1 (6 oz) package fettuccine pasta, broken into thirds .
  • 2 1/2 quarts chicken broth or chicken stock .
  • 1/4 c fresh tarragon, minced .
  • fresh ground black pepper .
  • 3 leeks, thinly sliced (rinse & soak in water until clean, then dry thoroughly) .
  • 5 garlic cloves, minced

Directions
  • Step #1 Heat olive oil or butter in pressure cooker on high.
  • Step #2 Add leeks, & saute until they are limp & begin to look transluescent.
  • Step #3 Add garlic & herbs, continue stirring until very fragrant.
  • Step #4 Add pepper & chicken breasts & white wine, simmer off alcohol.
  • Step #5 Add 2 quarts of broth or stock, bring to a boil, close & lock lid on highest pressure setting.
  • Step #6 When the cooker is brought up to pressure & the lid seals, turn down the heat & set the timer for eight mins.
  • Step #7 When the timer goes off, take cooker from heat, open steam valve & release pressure fully.
  • Step #8 Open cooker & fish out cooked chicken with tongs, & set aside on a cutting board.
  • Step #9 Add carrots to broth, close lid, lock it, bring to a boil, bring to full pressure, turn the heat down to medium low & set timer for two mins.
  • Step #10 When timer goes off, take cooker from heat, open valve & release pressure.
  • Step #11 Remove lid, put the cooker back on the heat, & set aside lid–it is done for the evening.
  • Step #12 Cut up chicken into bite sized pieces.
  • Step #13 Bring broth to a boil, adding the last half c of broth.
  • Step #14 When it is boiling, add noodles & cook for about four mins.
  • Step #15 (These fresh pasta noodles cook very quickly.
  • Step #16 ) When they are nearly done, use a slotted spoon or bamboo handled wire strainer utensil to fish out noodles.
  • Step #17 Set into bowl.
  • Step #18 Thicken broth with roux or slurry.
  • Step #19 Add chicken & noodles to thickened broth, & sprinkle in fresh tarragon.
  • Step #20 Bring to a simmer to reheat chicken & noodles.
