Duquette's Pumpkin Cake Recipe

Ingredients
  • 1 3/4 c flour .
  • 2 tsps cinnamon .
  • 1 c canned 100% pumpkin .
  • 3/4 c white sugar .
  • 1/2 c vegetable oil .
  • 3 large eggs .
  • nutmeg, to taste .
  • 1/2 tsp cloves .
  • 3/4 c packed brown sugar .
  • 1/4 tsp ground cloves .
  • salt, to taste .
  • 1 tsp baking powder

Directions
  • Step #1 Spray or line bottoms of pans.
  • Step #2 Place pumpkin & sugars in large bowl.
  • Step #3 Whisk until sugar dissolves.
  • Step #4 Add remaining ingredients except flour; whisk until well mixed.
  • Step #5 Stir in flour just until mixed.
  • Step #6 Divide batter into the 3 pans; about 1 1/4 c each.
  • Step #7 Stagger pans on oven rack & bake in 350 oven 25 - 30 min until top springs back when center of cake carefully pressed.
  • Step #8 Cool in pans 10 min; cool completely.
  • Step #9 To frost put 1 cake layer on serving plate.
  • Step #10 Spread with about 3/4 c frosting.
  • Step #11 Repeat twice.
