Sunday Brunch Mexi Sausage And Egg Burrito Recipe

Ingredients
  • 2 tbsps butter (optional) .
  • 2 tbsps whipping cream (or use 18% table cream) .
  • 7 large eggs .
  • 1/2-3/4 lb pork sausage (casings removed) .
  • 1/4 c canned green chilies (can use more) .
  • 6 slices American cheese (sliced in half) .
  • 6 (8 inch) flour tortillas (warmed) .
  • salt & black pepper .
  • 1-2 jalapeno pepper, seeded & finely sliced (optional) .
  • 6 tbsps picante sauce (can use more) .
  • 2-3 green onions, sliced (or use yellow onion)

Directions
  • Step #1 Wrap tortillas in foil wrap & warm in a 200 degree oven while preparing the sausage/egg mixture.
  • Step #2 Melt butter in the skillet; add in sausage with jalapeno peppers (if using) cook over med-heat/flame until the meat is browned, breaking up the meat with a wooden spoon while cooking.
  • Step #3 Add/stir in the green onions & green chilies; heat through.
  • Step #4 In a bowl whisk together the eggs with cream, then season this with salt & black pepper; pour over the sausages in the skillet; cover with a lid & cook this until eggs are set (no need to stir & do not overcook the eggs!).
  • Step #5 For each tortilla; place a half slice of cheese in the center of the warmed tortilla, then spoon about 1/3 c of the sausage/egg mixture over the cheese.
  • Step #6 Drizzle about 1 tbsp picante sauce then top this with the remaining half of the slice of cheese.
  • Step #7 Repeat with the remaining burritos (if desired you can keep the burritos warm in a 200 degree oven until ready to serve.
