Merry Berry Cookies Recipe

Ingredients
  • 1/3 c jam, for later .
  • 1/3 c granulated sugar, for later .
  • 1/2 tsp baking soda .
  • 2 c granulated sugar .
  • 4 c flour (pack it down in the c don't sift it) .
  • 1 1/2 c melted butter (3 sticks, 3/4 lb) .
  • 1/2 c melted melted raspberry jam or strawberry jam or blackberry jam (any jam) .
  • 1 tsp salt .
  • 2 beaten eggs

Directions
  • Step #1 Melt the butter In a large-ish microwave safe bowl.
  • Step #2 Add the sugar & mix thoroughly.
  • Step #3 Let the bowl sit on the counter while you do the next step.
  • Step #4 Melt the jam in the microwave or in a saucepan over low heat/flame.
  • Step #5 Once it’s the consistency of syrup, mix it in with the butter & sugar.
  • Step #6 Add the eggs, baking soda, & salt, stirring after each addition.
  • Step #7 Add the flour & mix thoroughly.
  • Step #8 Cover up the bowl & put in the fridge for at least 2 hrs.
  • Step #9 (Overnight is even better.
  • Step #10 ).
  • Step #11 When your ready to bake, preheat the oven to 350 degrees, rack in the middle position.
  • Step #12 Roll the chilled dough into small walnut-sized balls with your hands.
  • Step #13 Put 1/3 c sugar in a small bowl & roll the balls in it.
  • Step #14 Place them on a greased standard-sized cookie sheet, 12 cookies per sheet.
  • Step #15 Flatten the dough balls with a greased spatula.
  • Step #16 Make a small indentation with your thumb or index finger in the center of each cookie.
  • Step #17 Fill the indentation with about 1/8 tsp of jam.
  • Step #18 Bake the cookies for 10 to 12 mins at 350 degrees.
  • Step #19 Let them cool for mins on the cookie sheet, & then transfer them to a wire rack to finish cooling.
