Artichoke Pesto Recipe

Ingredients
  • 1/2 c grated fresh parmigiano-reggiano cheese .
  • 2 tsps grated lemon rind .
  • 1/4 c finely sliced fresh parsley .
  • 1/4 tsp salt .
  • 2 (14 oz) cans quartered artichoke hearts, rinsed & drained .
  • 1 tbsp lemon juice .
  • 1 tbsp olive oil

Directions
  • Step #1 Place artichokes in food processor/blender & pulse until finely sliced (5 times).
  • Step #2 Add remaining ingredients & pulse to mix.
