Step #1 In a mixing bowl, 2 c sugar, mix eggs, oil & 2 tsps extract; mix well.
Step #2 Combine flour, baking powder & salt; add to egg mixture alternately with buttermilk just until moistened.
Step #3 stir in the coconut & pecans.
Step #4 Spoon into a greased 10-in.
Step #5 fluted tube pan.
Step #6 Bake at 350 degrees F for 60-70 mins or until a toothpick inserted near the center comes out clean.
Step #7 Meanwhile, in a saucepan, mix the water, butter & remaining sugar.
Step #8 Bring to a boil; cook for 5 mins.
Step #9 Remove from the heat; add in the remaining extract.
Step #10 Slowly pour hot syrup over hot cake.
Step #11 Cool in pan for 4 hrs before removing to a serving plate.
Step #12 Dust with confectioners' sugar if desired.
