Coconut Pecan Cake Recipe

Ingredients
  • 3 tsps coconut extract, divided
  • 1 c vegetable oil
  • 1 c sliced pecans
  • 3 c all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 c water
  • 4 eggs
  • 1 c flaked coconut
  • 3 c sugar, divided
  • 1/2 tsp salt
  • confectioners' sugar
  • 1 c buttermilk
  • 2 tbsps butter or margarine

Directions
  • Step #1 In a mixing bowl, 2 c sugar, mix eggs, oil & 2 tsps extract; mix well.
  • Step #2 Combine flour, baking powder & salt; add to egg mixture alternately with buttermilk just until moistened.
  • Step #3 stir in the coconut & pecans.
  • Step #4 Spoon into a greased 10-in.
  • Step #5 fluted tube pan.
  • Step #6 Bake at 350 degrees F for 60-70 mins or until a toothpick inserted near the center comes out clean.
  • Step #7 Meanwhile, in a saucepan, mix the water, butter & remaining sugar.
  • Step #8 Bring to a boil; cook for 5 mins.
  • Step #9 Remove from the heat; add in the remaining extract.
  • Step #10 Slowly pour hot syrup over hot cake.
  • Step #11 Cool in pan for 4 hrs before removing to a serving plate.
  • Step #12 Dust with confectioners' sugar if desired.
