Salmon And Garlic Rice Recipe

Ingredients
  • 5 tbsps garlic, sliced .
  • 1 tsp sea salt .
  • 4 salmon fillets, cleaned & skin discarded (about 100 g each) .
  • 2 tbsps margarine .
  • 300F g French beans .
  • 3 c brown rice, cooked

Directions
  • Step #1 Rub in 1/4 of salt onto each piece of salmon.
  • Step #2 Leave aside in the fridge.
  • Step #3 Remove the ends of the French beans & cut them into 4 cm lengths.
  • Step #4 Bring a small saucepan of water to the boil.
  • Step #5 Blanch the beans by dipping them into the hot boiling water for 1 min.
  • Step #6 Drain & set aside.
  • Step #7 Heat 2 tbsps margarine in a non-stick flat pan over a medium fire.
  • Step #8 When hot, fry the salmon for about 15 seconds on each side.
  • Step #9 Stir-fry garlic for about 30 seconds or until pale gold.
  • Step #10 Spoon three-quarters of the garlic over the pieces of fish.
  • Step #11 Add the rice to the pan with remaining garlic.
  • Step #12 Spice up & stir the mixture well.
  • Step #13 Divide the rice into four portions.
  • Step #14 Do the same for the beans.
  • Step #15 Serve this dish at once.
