Rhubarb Custard Recipe

Ingredients
  • 3 tbsps cornstarch .
  • 1 tbsp water .
  • 1 c sugar .
  • 2 c milk .
  • 1 lb rhubarb .
  • 1/8 tsp salt .
  • 3 eggs, beaten

Directions
  • Step #1 Wash rhubarb, discard leaves & dice stems.
  • Step #2 Add water, cover, & cook slowly until rhubarb is soft.
  • Step #3 Mix together 1/2 c of the sugar & 1 tbsp of the cornstarch & stir in theto the rhubarb; stir constantly over low heat/flame until sauce is thickened, then remove this from heat.
  • Step #4 Mix remaining cornstarch & stir in theto the rhubarb; stir constantly over low heat/flame until sauce is thickened, then remove this from heat.
  • Step #5 Mix remaining cornstrarch sugar & salt in saucepan, add milk & cook over direct heat with constant stirring, until mixture boils & thickens.
  • Step #6 Slowly stir in theto the beaten eggs & cook over hot water, stirring constantly for 2 mins.
  • Step #7 When both custard & rhubarb sauce are cooled, stir the rhubarb into the custard.
  • Step #8 Serve chilled.
  • Step #9 5 servings.
