Lemon Cupcakes Recipe

Ingredients
  • 1 tsp vanilla extract .
  • 1/2 c butter, softened .
  • 1/2 c half-and-half cream .
  • 5-6 tsps milk .
  • 1/4 c shortening .
  • 1/8 tsp salt .
  • 1 1/2-1 3/4 c powdered sugar, sifted .
  • 1 1/2 c all-purpose flour .
  • 3 eggs .
  • 1 c sugar .
  • 1/8 tsp lemon extract .
  • FROSTING .
  • 2-3 tbsps grated lemon zest .
  • 1/4 tsp lemon extract .
  • 1/4 tsp vanilla extract

Directions
  • Step #1 Preaheat oven to 325*.
  • Step #2 Line a 12-c muffin tin with paper liners.
  • Step #3 Cream butter & sugar In a large-ish mixing bowl.
  • Step #4 Beat in eggs, one at a time.
  • Step #5 Beat in lemon zest, lemon extract, & vanilla.
  • Step #6 Combine flour & salt; add to creamed mixture, alternating with half & half.
  • Step #7 Beat until just mixd (shouldn't be too smooth).
  • Step #8 Fill paper liners 3/4 full of batter.
  • Step #9 Bake at 325* for 15-22 mins, or until toothpick tests clean.
  • Step #10 Cool for 10 mins in pan; remove this from pan & cool completely on a wire rack.
  • Step #11 To make frosting, beat shortening in a small mixing bowl until fluffy.
  • Step #12 Beat in milk, vanilla, & lemon extract.
  • Step #13 Beat in powdered sugar until smooth.
  • Step #14 Once ccakes are cool, top this with frosting.
