Goan Mussels Recipe

Ingredients
  • 3 garlic cloves, sliced .
  • 2 tbsps fresh coriander leaves .
  • 1 tsp turmeric .
  • 1 tsp ground coriander .
  • 15 oz boiling water .
  • 1 tsp ground cumin .
  • 2 lbs fresh mussels, scrubbed & bearded .
  • 1/2 tsp salt .
  • 1 medium onion, sliced .
  • 2 tbsps oil .
  • 1 tsp ground ginger .
  • 2 c creamed coconut

Directions
  • Step #1 Dissolve the coconut in the boiling water.
  • Step #2 In a pan heat the oil & fry the onion till just golden brown.
  • Step #3 Add the garlic & ginger & fry for 3 mins.
  • Step #4 Add the turmeric, coriander & salt & fry for 1 min.
  • Step #5 Add the coconut water & let simmer for a few mins.
  • Step #6 Add the mussels, cover the pan & cook for about 5 mins or until the mussels open.
  • Step #7 Serve garnished with the coriander leaves.
  • Step #8 NOTE.
  • Step #9 discard any mussel that does not open.
