Blackberry Cobbler Recipe

Ingredients
  • 3 tbsps sugar, divided .
  • 7 tbsps butter (cold & divided) .
  • Sour Cream Pastry .
  • 1/4 tsp baking soda .
  • 1/2 tsp salt .
  • 1/2 c sugar .
  • 1/4 c heavy whipping cream .
  • 3 tbsps cornstarch .
  • 6 c blackberries (fresh or frozen) .
  • 1 tsp lime peel, grated .
  • 3/4 tsp baking powder .
  • 1 1/3 c all-purpose flour .
  • 1/2 c sour cream

Directions
  • Step #1 Place blackberries in large bowl.
  • Step #2 Combine the sugar, cornstarch & lime peel; sprinkle it over berries & carefully toss to coat.
  • Step #3 Pour the mixture into a greased 9-inch square baking dish.
  • Step #4 In large bowl, mix the flour, baking powder, 2 T sugar, salt & baking soda.
  • Step #5 Cut in 5 T butter until crumbly.
  • Step #6 Combine sour cream & heavy cream; slowly add to crumb mixture, tossing with a fork until mixture forms a ball.
  • Step #7 Roll out to fit top of baking dish.
  • Step #8 Place pastry over filling.
  • Step #9 Trim & seal edges; cut slits in top.
  • Step #10 Melt remaining butter; brush over pastry.
  • Step #11 Sprinkle top with remaining sugar.
  • Step #12 Bake, uncovered, at 375 degrees for 30 mins.
  • Step #13 Cover up & bake 15-20 mins longer or until filling is bubbly & crust is golden brown.
  • Step #14 Cool for 15 mins before serving.
  • Step #15 Note: If using frozen berries, do not thaw before assembling cobbler.
