Ingredients
4 small potatoes .
4 boneless skinless chicken breasts .
1 tbsp parsley .
1 tbsp Splenda sugar substitute .
1 tsp black pepper .
1 tsp minced fresh garlic cloves .
3/4 tbsp olive oil .
1 tbsp balsamic vinegar .
1/4 c lemon juice (fresh) .
1 tsp salt
Directions
Step #1 Preheat oven to 400F degrees.
Step #2 Cut chicken into bitsize pieces.
Step #3 Cut potatoes into bitsize pieces.
Step #4 Place chicken & potatoes in glass casserole dish.
Step #5 Squeeze the juice out of the lemon into a bowl.
Step #6 Remove the seeds.
Step #7 In same bowl with the lemon juice, olive oil, balsamic vinegar, add the splenda, salt, pepper & garlic.
Step #8 You can add more garlic if you like a stronger taste.
Step #9 Mix all these ingredience together.
Step #10 (The builder in Zaar had a problem recognizing minced garlic.
Step #11 Fresh Garlic will work, but I use the minced garlic that is packaged in a jar.
Step #12 ).
Step #13 Pour the mixture over the chicken & potatoes & mix well.
Step #14 Make sure that you coat the chicken & potatoes.
Step #15 Place in oven.
Step #16 Cook for about 30 mins until chicken is done & potatoes are golden.
Step #17 Continue basting during the cooking time.
Step #18 Depending on the size you cut the potatoes & chicken, you cooking time will very - so you will need to check you time.
Step #19 Enjoy.
