Lebanese Chicken & Pototes - Ww Friendly - 7 Points Recipe

Ingredients
  • 4 small potatoes .
  • 4 boneless skinless chicken breasts .
  • 1 tbsp parsley .
  • 1 tbsp Splenda sugar substitute .
  • 1 tsp black pepper .
  • 1 tsp minced fresh garlic cloves .
  • 3/4 tbsp olive oil .
  • 1 tbsp balsamic vinegar .
  • 1/4 c lemon juice (fresh) .
  • 1 tsp salt

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Cut chicken into bitsize pieces.
  • Step #3 Cut potatoes into bitsize pieces.
  • Step #4 Place chicken & potatoes in glass casserole dish.
  • Step #5 Squeeze the juice out of the lemon into a bowl.
  • Step #6 Remove the seeds.
  • Step #7 In same bowl with the lemon juice, olive oil, balsamic vinegar, add the splenda, salt, pepper & garlic.
  • Step #8 You can add more garlic if you like a stronger taste.
  • Step #9 Mix all these ingredience together.
  • Step #10 (The builder in Zaar had a problem recognizing minced garlic.
  • Step #11 Fresh Garlic will work, but I use the minced garlic that is packaged in a jar.
  • Step #12 ).
  • Step #13 Pour the mixture over the chicken & potatoes & mix well.
  • Step #14 Make sure that you coat the chicken & potatoes.
  • Step #15 Place in oven.
  • Step #16 Cook for about 30 mins until chicken is done & potatoes are golden.
  • Step #17 Continue basting during the cooking time.
  • Step #18 Depending on the size you cut the potatoes & chicken, you cooking time will very - so you will need to check you time.
