Garlicky Roasted Potatoes With Herbs Recipe

Ingredients
  • 1/2 tsp salt .
  • 1 1/2-2 lbs yukon gold potatoes or red potatoes, quartered .
  • 1/4 tsp pepper .
  • 1/2 tsp lemon rind, grated .
  • 1 tbsp olive oil .
  • 2 tbsps garlic, sliced .
  • 1/4 c flat leaf parsley, sliced

Directions
  • Step #1 Preheat oven to 475.
  • Step #2 Combine garlic & oil in a small saucepan over med heat.
  • Step #3 Cook 2 min or til golden, stirring frequently.
  • Step #4 Do not burn.
  • Step #5 Remove garlic from oil with slotted spoon or by pouring through a sieve.
  • Step #6 Set aside.
  • Step #7 Drizzle garlic infused oil over potatoes tossing well to coat.
  • Step #8 Arrange on a baking sheet coated with cooking spray in a single layer.
  • Step #9 Sprinkle top with salt & pepper.
  • Step #10 Bake 30-40 min or til golden & tender.
  • Step #11 Combine reserved garlic, parsley & lemon rind in a small bowl.
  • Step #12 Sprinkle top over potatoes.
