Italian Pasta And Bean Soup Recipe

Ingredients
  • parmesan cheese .
  • 1/4 tsp pepper .
  • 4 (10 oz) cans chicken broth (Campbell Soup) .
  • 1/2 tsp minced garlic .
  • 2 (15 oz) cans cannellini beans, with liquid .
  • 1 lb bulk sausage, thoroughly cooked .
  • 1 tbsp italian seasoning .
  • 1 c sliced onions .
  • 8 oz penne pasta, cooked .
  • 1/4 c olive oil .
  • 2 (15 oz) cans sliced tomatoes

Directions
  • Step #1 Saute first 3 ingredients in large pot until onions are very tender.
  • Step #2 Add next 6 ingredients & let simmer for about 20-30 mins.
  • Step #3 Cool & store this in frig for at least a couple of hrs.
  • Step #4 Reheat & let simmer for about 30 mins before serving.
  • Step #5 Place cooked Penne noodles in bottom of soup bowl & ladle soup over noodles.
  • Step #6 Liberally sprinkle Parmesan Cheese on soup.
  • Step #7 (I like to add cheese, stir soup & add more!).
  • Step #8 Serve with French Bread or rolls.
  • Step #9 Note: Because I do not want the noodles to soak up the juice in my leftover soup, I do NOT add noodles directly to soup pot.
