Whole Wheat Oatmeal Muffins Recipe

Ingredients
  • 1/2 tsp salt .
  • 1 tbsp molasses .
  • 2/3 c walnuts, sliced .
  • 2 tbsps Splenda Sugar Blend for Baking .
  • 1 egg .
  • 1/3 c canola oil .
  • 1/4 c milk (optional) .
  • 1 1/4 c whole wheat pastry flour .
  • 1 tsp cinnamon .
  • 1/2 tsp baking soda .
  • 2 tsps baking powder .
  • 3/4 c rolled oats (not instant or quick) .
  • 1 c buttermilk

Directions
  • Step #1 Mix oats & buttermilk.
  • Step #2 Let stand for 20 mins.
  • Step #3 Preheat oven to 400F degrees & spray a 12-c muffin tin with cooking oil.
  • Step #4 Place whole wheat pastry flour, baking soda, cinnamon, salt, baking powder, & Splenda in a mixing bowl.
  • Step #5 Whisk until well mixd.
  • Step #6 Stir in walnuts.
  • Step #7 In a separate bowl, mix together egg, canola oil, & molasses.
  • Step #8 Add this mixture to flour mixture & stir well.
  • Step #9 The batter will be very thick.
  • Step #10 If it's too thick, add 1/4 c milk.
  • Step #11 Spoon batter into muffin tin.
  • Step #12 Bake for 15 mins.
  • Step #13 Cool on wire rack for 5 mins before turning muffins out of pan.
