Ingredients
  • 1/2 lb frozen octopus or squid .
  • 1 (6 oz) can chipotle chiles in adobo .
  • 2 c saffron rice mix .
  • 6 tortillas, deep fried .
  • 1/2 lb frozen pollock .
  • 2 limes, cut into wedges .
  • 1/2 lb frozen shrimp .
  • 1 (12 oz) can black beans .
  • 2 tbsps garlic or sun-dried tomatoes, compote (you can find it at Kroger in the organic isle) .
  • 1 large vidalia onions .
  • 2 avocados, cut into wedges .
  • 6 c water .
  • 2 tbsps bouquet garni .
  • 1 bay leaf .
  • 1/2 lb frozen clams .
  • 2 tbsps clarified butter (which I make myself)

Directions
  • Step #1 Big pot on medium high.
  • Step #2 Add clarified butter till melted.
  • Step #3 Add onions simmer till just carmelized.
  • Step #4 add bouquet garni.
  • Step #5 Add Bay leaf.
  • Step #6 Add water.
  • Step #7 Add seafood mix & bring to a boil for 5-7 mins.
  • Step #8 Reduce heat to simmer & add Chipoltes in Adobo,garlic/sundried tomato mixture, & let simmer all for 45 mins covered.
  • Step #9 Remove bayleaf & ladle out into deepfried tortillia bowls with avocado & lime on the side.
