Chocolate Chip Apricot Cookies Recipe

Ingredients
  • 1/2 c packed brown sugar
  • 1 1/2 tsps vanilla extract
  • 1 c chocolate chips
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 c butter, softened
  • 1 c sliced dried apricots
  • 1/2 c turbinado sugar
  • 1 egg, lightly beaten
  • 1 1/8 c all-purpose flour

Directions
  • Step #1 Preheat oven to 375 degrees F (190 degrees C).
  • Step #2 Grease a cookie sheet.
  • Step #3 Mix the flour & baking soda in a bowl.
  • Step #4 In a separate bowl, turbinado sugar, then beat in the egg, & brown sugar until fluffy, beat together the butter, vanilla, & salt.
  • Step #5 Stir the flour & baking soda into the butter mixture.
  • Step #6 Fold in the chocolate chips & apricots.
  • Step #7 Drop by rounded tspfuls onto the cookie sheet.
  • Step #8 Bake for 8 to 10 mins in the preheated oven.
  • Step #9 Allow cookies to cool on baking sheet for 5 mins before removing to a wire rack to cool completely.
