Lemon And Garlic Lamb Rack Recipe

Ingredients
  • rosemary sprigs .
  • 1 tbsp rosemary, sliced .
  • salt & pepper .
  • 2 lemons, cut in wedges .
  • 1/2 head garlic .
  • 1/2 c lemon juice .
  • GRAVY .
  • 1/2 c red wine .
  • 1 onion, cut in wedges .
  • 1/4 c olive oil .
  • 4 garlic cloves, crushed or 2 tsps prepared minced garlic .
  • 2 c vegetable stock .
  • 1 lamb rack, trimmed & slashed .
  • 1/4 c flour

Directions
  • Step #1 Marinade lamb in lemon juice, oil, garlic & sliced rosemary for at least an hr.
  • Step #2 Combine lemon, onion, garlic & rosemary sprigs in a baking dish & place lamb rack with marinade on top.
  • Step #3 Bake at 180 C for 35-40 mins or until cooked to your preference.
  • Step #4 Remove lamb to a plate & keep warm.
  • Step #5 Discard pan ingredients but reserve pan juices.
  • Step #6 Heat pan juices & mix in flour.
  • Step #7 Cook for 1 min.
  • Step #8 Gradually mix in stock & wine until smooth.
  • Step #9 Cook stirring until sauce boils & thickens, Spice up to taste.
  • Step #10 Serve roast, sliced into cutlets with sauce & vegetables of your choice.
