Grilled Zucchini & Fig Salad With A Yogurt Dressing Recipe

Ingredients
  • 4 zucchini, sliced thinly lengthwise .
  • 1/4 tsp sugar .
  • 6 tbsps mint, sliced .
  • 1 tbsp milk .
  • 3 c baby spinach .
  • 1 tsp lemon juice .
  • 6 figs, trimmed & quartered .
  • 1 tbsp olive oil .
  • 1 spring onion, thinly sliced .
  • 100 g Greek yogurt

Directions
  • Step #1 Heat griddle pan (or grill) to medium heat.
  • Step #2 Brush zucchini slices with olive oil on both sides & grill for 3 mins on each side until charred with stripes.
  • Step #3 Brush the fig quarters with olive oil & grill for 3 mins in total, turning once.
  • Step #4 To make the dressing: whisk the yogurt, sugar & some salt & pepper in a bowl & thin it to drizzling consistency with the milk.
  • Step #5 Stir in the sliced spring onion.
  • Step #6 Shortly before serving, toss the spinach with enough olive oi to coat it & season this with a squeeze of lemon juice & a pinch of salt.
  • Step #7 Mix the spinach leaves into the zucchini slices & figs on a large serving plate.
  • Step #8 Drizzle with dressing & sprinkle with sliced mint.
