Chicken & Rice (or Noodle) Soup Recipe

Ingredients
  • 9 c water .
  • 1 large carrot, cut in large pieces .
  • 1 bay leaf .
  • 2 stalks celery, cut in large pieces .
  • 8 peppercorns .
  • 6 sprigs parsley .
  • 1 large onion, peeled .
  • 1 tbsp salt .
  • 1 large leek, cut in large pieces .
  • 2 whole cloves .
  • 1 (5-6 lb) baking hens

Directions
  • Step #1 Wash chicken & remove giblets.
  • Step #2 Place chicken in large soup kettle.
  • Step #3 Add water, salt, carrot, bay leaf, celery, the clove-stuck onion, leek, parsley, & peppercorns.
  • Step #4 Bring to a boil; reduce heat, cover, & let simmer 2 to 2.
  • Step #5 5 hrs, or until chicken is tender.
  • Step #6 Remove chicken from the kettle.
  • Step #7 Strain broth, removing other ingredients, & return broth to kettle.
  • Step #8 Skin chicken, remove bones, & cut up chicken.
  • Step #9 To make soup:.
  • Step #10 Add sliced carrots, sliced onions, sliced celery, peas, & rice to broth in kettle; simmer for 10 mins.
  • Step #11 Add chicken, peas, salt & pepper to taste; simmer for 10 mins or until rice is tender.
  • Step #12 NOTE: When using noodles, I add them to the broth however many mins it takes to cook them before serving.
