Goulash Burger Recipe

Ingredients
  • 1 tbsp extra-virgin olive oil (EVOO) .
  • 4 radishes, thinly sliced & lightly salted .
  • unsalted butter, softened, for spreading .
  • fresh dill, finely sliced (a generous handful) .
  • 3 scallions, finely sliced .
  • 2 tsps smoked sweet paprika (2/3 palmful) .
  • 1 c sour cream .
  • flat leaf parsley, finely sliced (a generous handful) .
  • 1/4 English cucumber, thinly sliced crosswise & lightly salted .
  • 8 leaves bibb lettuce .
  • 1 small shallot, finely sliced .
  • 2 jarred roasted red peppers, patted dry .
  • salt & freshly ground black pepper .
  • 1 1/2 lbs ground chicken .
  • 4 individual brioche rolls, split (any eggy roll will work)

Directions
  • Step #1 Place ground chicken in a bowl with the scallions, parsley, dill & paprika; season this with salt & pepper.
  • Step #2 Combine the mixture with a fork & form into four 1-inch-thick patties.
  • Step #3 In a heavy nonstick skillet, heat the EVOO over medium-high heat, making sure it coats the pan.
  • Step #4 When the oil is hot, add the burgers & cook for 6 mins on each side.
  • Step #5 Meanwhile, preheat the broiler.
  • Step #6 Place the red peppers, sour cream & shallot in a food processor/blender.
  • Step #7 Process until smooth, about 20 seconds.
  • Step #8 Transfer to a small dish.
  • Step #9 Toast the rolls under the broiler & spread lightly with softened butter.
  • Step #10 Slather the rolls with the red pepper sauce.
  • Step #11 Set a burger on each bun bottom & top this with the radish & cucumber slices, 2 lettuce leaves & the roll top.
